Favorite Recipe of the week

I have been doing meal prep for a lot of my clients recently so I decided to give it a shot for myself this week! I am only just finishing day two, so I do not have much to report, but I do want to share my favorite recipe of the week!

MANGO QUINOA BOWL

What You Will Need:

¼ c quinoa - I prefer Wild Oats Marketplace Quinoa & Brown Rice Blend

1/8 c diced red onion

1 c spinach

¼ c mango diced

4 prunes diced

1/8 c sliced almonds

A large pinch of shredded unsweetened coconut flakes

½ c diced chicken

Cumin

Chili pepper

Garlic seasoning

Salt

Pepper

Paprika

 

For The Dressing:

1 and lemon squeezed

1 and ½ oranges squeezed + 2 whole orange slices

¼ cup cilantro

1 tbs or less of honey

 

Directions:

Cook the quinoa mix in chicken broth. Once finished, place in a bowl and mix in all the fruits, veggies, coconut and almonds. Place over the spinach. Season the diced chicken with salt, pepper, cumin, paprika, chili powder and garlic.  Cook in a pan over medium heat for about 8 – 10 minutes. Add the cooked chicken into the other ingredients. Take the lemon juice, orange juice and slices along with the cilantro and honey – add to a food processor, chop and blend until thoroughly mixed. Pour over the quinoa mix (probably only need a qtr. of what was made) toss and enjoy!
