Monday night's CORE FIT dinner fix🍴- Baked chicken stuffed with broccoli and cheddar cheese! 👌Thanks for the idea @econlon24! An easy protein and greens packed meal! We would love to see what you all are cooking in your kitchens! Take a picture and post it with ‪#‎corefitdinnerfix‬ 🍎




What you will need: 

  1. Four boneless, skinless chicken breasts 
  2. Four sharp cheddar cheese slices
  3. Four cups frozen broccoli
  4. Salt
  5. Pepper
  6. Paprika
  7. Cayenne pepper
  8. Garlic powder 
  9. Onion powder
  10. The original Mrs. Dash
  11. Olive oil

What you will do: 

Preheat oven to 350° F. Take the frozen broccoli and half way thaw it out in the microwave on the defrost cycle. Take the chicken out of its package at slice into each chicken breast on its side making a pocket.  Then, take a drizzle of olive oil over each piece and rub it around, giving it a very thin coat.  Next, take each of the seasonings and generously apply them to both sides of the chicken.  Stuff chicken with 1 slice cheese and 1 cup broccoli (this will differ depending on chicken size but feel free to throw any extra broccoli on the pan and roast it up with the chicken!)   Put chicken in oven. Cook time will vary depending on chicken size but mine took 35 minutes! Pull it out and slice through to check. Be careful not to overcook or you will lose the juice and flavor!
