Chilled Caribbean Shrimp Salad

What you will need:
1/4 cup medium red onion, thinly sliced
kosher salt
1 tablespoon olive oil
2 1/2 tablespoon fresh lime juice
2 oranges peeled and divided into segments
1 pound cooked and peeled shrimp
1 large mango diced
1 medium fresh jalapeño pepper
2 tablespoons chopped fresh cilantro
1 medium avocado, cut into 1 inch chunks
fresh ground black pepper

 What you will do: Put the onions in a large bowl and season with 1/4 teaspoon salt. Add the olive oil and lime juice. Set aside for 5 minutes.

Set aside 3 parts (segments) of the orange then put the remaining orange pieces in the bowl with onions. Add the cooked shrimp, mango, jalapeño, and cilantro and season with 1/4 teaspoon of salt and black pepper to taste.

Squeeze the juice from the remaining orange segments over the salad and refrigerate until chilled, at least 30 minutes. When ready to serve, add in the avocado and toss into salad, add a dash of salt and pepper. *To make recipe ahead of time, add avocado right before. 

I added a bit more lime, olive oil, salt, pepper and cilantro to my liking!
